h2o: the mystery, art, science

If there is magic on this planet, it is contained in water.
— Loren Eiseley

Water is elemental to life, but often overlooked and under-appreciated.  They may all be clear and transparent.  Indeed, not all water is the same!  Water from different sources will vary in taste.

Just like wine, terroir affects water.

To vary the taste of the water, TDS plays a crucial role! So, what is TDS?

TDS stands for total dissolved solids. It measures the mineral composition of any given water, which results in creating its own specific flavor profile and character. TDS levels determine how much sodium, magnesium, calcium and other minerals are present, therefore informing how your water of choice will pair with your food of choice.  The following natural minerals are often found in natural mineral water.  Content of each vary the taste of each sip of water significantly.
